January 17 - Jalapeño Popper Chicken

I love, love, love jalapeño poppers! Yum! Cheesy gooeyness with a spicy kick. So when I saw this recipe I knew I had to try it.

I normally HATE cream cheese! Even the idea of it is just gross, but I tried it and this is a keeper!

Cream cheese, cheddar and diced jalapeños stuffed into a pocket in your chicken. Bread it and bake. Yum!

The chicken could have been a little more tender, a suggestion/possible change would be to pound the chicken flat and spread the filling on top and then roll it up.  The tough spots could have also been the result of the rapid defrost we had to do because I woke up late, couldn't find my car keys and therefore forgot to get the chicken out in the morning.  Either way yummy baked chicken with a cheesy, gooey, spicy kick.  Delicious!
